Serves 4

Salad:

  • ⅓ cup honey-roasted pistachios
  • 2 heads kale, shredded (thick stems removed)
  • 2 KIKU® apples, cored and thinly sliced
  • ⅓ cup fresh cranberries
  • About 115 g (4 oz) prosciutto, thinly sliced
  • ½ cup crumbled feta or gorgonzola cheese


For the dressing:

  • 1 garlic clove, finely chopped or pressed
  • ⅓ cup olive oil
  • ¼ cup apple cider vinegar
  • 2 tsp Dijon mustard
  • 2 tsp honey
  • Salt and pepper

Preparation:

Prepare the kale:
Wash the kale, remove the thick stems, and shred finely. Place in a large bowl, sprinkle lightly with salt, and massage with your hands for 1–2 minutes until it softens.

Make the dressing:
In a small bowl or jar, combine garlic, olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Whisk or shake well until the dressing is emulsified.

Assemble the salad:
Add the KIKU® apple slices, fresh cranberries, pistachios, strips of cured ham, and feta or gorgonzola to the kale. Pour the dressing over and gently toss everything together.

Serve:
Enjoy immediately, or let it sit in the fridge for a while to let the flavors develop even more!
